Description

This Easiest Miso Aubergine (Nasu Dengaku) recipe offers a simple, flavorful way to enjoy tender roasted aubergines glazed with a savory-sweet miso sauce. Perfect as a side dish or light main, it combines umami-rich miso paste, maple syrup, and soy sauce to create a luscious topping that caramelizes beautifully in the oven.

Ingredients

Main Ingredients

  • 2 medium aubergines (eggplants)
  • 2 tbsp miso paste
  • 1 tbsp olive oil
  • 1 tbsp maple syrup (adjust to taste for sweetness)
  • 1 tbsp soy sauce or tamari

Instructions

  1. Preheat the Oven: Set your oven to 400°F (205°C) to prepare for roasting the aubergines.
  2. Prepare the Aubergines: Cut the aubergines in half lengthwise. Using a sharp knife, score criss-cross patterns into the flesh about half an inch deep. This allows the miso glaze to absorb better during cooking.
  3. Initial Roasting: Arrange the aubergine halves cut-side up on a baking sheet. Roast in the oven for 20 minutes until the flesh is just starting to soften and develop a light brown color.
  4. Make the Miso Glaze: While the aubergines are roasting, combine the miso paste, olive oil, maple syrup, and soy sauce in a small bowl. Add olive oil, maple syrup, and soy sauce one at a time to the miso paste to avoid lumps, stirring until smooth.
  5. Glaze and Final Roast: Remove the aubergines from the oven and generously brush the miso glaze over the cut sides. Return them to the oven for another 10-15 minutes, or until the glaze is golden and the aubergines are tender and soft.
  6. Serve: Enjoy the miso-glazed aubergines immediately while warm for the best flavor and texture.

Notes

  • You can use tamari instead of soy sauce to make this gluten-free.
  • Adjust the amount of maple syrup to control the sweetness of the glaze.
  • Score the aubergine flesh deeply to help the glaze penetrate it well.
  • Serve as a side dish or part of a Japanese-inspired meal.
  • Leftovers can be stored in the refrigerator for up to 2 days and gently reheated.
