Description

This Easiest Ever Creamy Chicken Fajita Pasta is a quick and delicious one-pan meal that combines tender chicken, sautéed peppers, and a creamy, cheesy sauce. Perfect for a weeknight dinner, this recipe blends fajita-seasoned chicken with rich double cream and melted cheddar for a satisfying and flavorful pasta dish ready in just 20 minutes.

Ingredients

Pasta

  • 300 g (10.5 oz) pasta

Chicken and Seasoning

  • 400 g (1 lb) chicken breast, diced
  • 3 tablespoon olive oil
  • 30 g (1 ounce) fajita seasoning

Vegetables

  • 1 medium onion, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced

Sauce and Cheese

  • 150 ml (3/4 cup) double cream
  • 100 g (3.5 oz) cheddar, grated
  • Freshly ground black pepper, to taste

Instructions

  1. Boil Pasta: Boil the pasta in salted water according to package instructions. Before draining, reserve 1 cup of pasta water to adjust the sauce consistency later.
  2. Cook Chicken: Heat olive oil in a large pan over medium heat. Add the diced chicken breast and shallow fry until slightly golden, about 4-5 minutes.
  3. Add Seasoning and Vegetables: Sprinkle the fajita seasoning over the chicken and stir well to coat. Cook for another minute, then add sliced onions and both red and green peppers to the pan.
  4. Sauté Veggies: Fry the chicken and vegetables together for 4-5 minutes until the peppers and onions have softened.
  5. Add Cream: Pour in the double cream and let it bubble gently for about a minute to meld flavors and thicken the sauce slightly.
  6. Combine Pasta and Sauce: Add the drained pasta to the pan. Stir everything together, adding reserved pasta water as needed if the sauce is too thick.
  7. Finish with Cheese and Seasoning: Stir in the grated cheddar cheese until melted and fully combined. Season the dish with freshly ground black pepper to taste and serve immediately.

Notes

  • Reserve pasta water before draining to adjust sauce thickness easily without watering down flavor.
  • Use double cream for a rich and velvety sauce; heavy cream can be used as a substitute.
  • Slicing the onion and peppers uniformly helps them cook evenly.
  • For a spicier kick, add a pinch of chili flakes when adding fajita seasoning.
  • Leftover pasta can be stored in an airtight container in the refrigerator for up to 2 days.
