Stuffing
- 1 ½ Pounds Lean Ground Beef

- 1 Can Tomatoes with Green Chiles (Rotel) (10 Ounces, drained)

- 1 Can Tomatoes with Green Chiles (Rotel) (10 Ounces, undrained)
- 1 Can Tomato Paste (6 Ounces)
- ¼ Cup Brown Sugar (Packed)
- 1 Cup Chicken Broth
Instructions
- Prepare Peppers: Cut off the tops of the bell peppers and remove seeds and ribs carefully to create hollow shells for stuffing.
- Make Stuffing: In a large bowl, combine the lean ground beef, uncooked white rice, finely diced sweet onion, minced garlic, salt, and pepper. Stir in the drained can of tomatoes with green chiles to incorporate their flavor without excess liquid.
- Stuff Peppers: Evenly stuff each hollowed bell pepper with the beef and rice mixture. Place the stuffed peppers upright in the slow cooker to hold their shape during cooking.
- Prepare Sauce: In a medium bowl, mix the reserved liquid from the drained can of tomatoes with green chiles, the entire second can of tomatoes with green chiles (undrained), chicken broth, tomato paste, and packed brown sugar. Stir until combined to create a rich, balanced sauce.
- Cook: Pour the prepared sauce evenly over the stuffed peppers in the slow cooker. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until peppers are tender and the filling is thoroughly cooked.

- For a vegetarian version, substitute ground beef with cooked lentils or plant-based meat alternatives.
