Description

These Double-Stacked Mini Sandwiches are bite-sized appetizers featuring layers of provolone cheese, deli ham, and a creamy whipped cream cheese topping. Perfectly cut using a round cookie cutter, they are assembled with a generous spread of mayo and finished with a decorative piping of whipped cream cheese. Ideal for parties and gatherings, these savory sandwiches are served cold and packed with flavor.

Ingredients

Bread

  • 12 slices of sandwich bread

Cheese and Meat

  • 16 slices of provolone cheese
  • 16 slices of deli ham

Spreads

  • 16 teaspoons mayo, divided
  • 4 oz plain whipped cream cheese (⅓ of a 12 oz tub)

Instructions

  1. Cut the bread rounds: Using a 2.5 inch round cookie cutter, cut 24 bread rounds from the 12 slices of sandwich bread to create uniformly sized mini sandwich bases.
  2. Cut cheese and ham rounds: With the same cookie cutter, cut 16 rounds from the 16 slices of provolone cheese and 16 rounds from the 16 slices of deli ham. Save the leftover scraps for other recipes.
  3. Assemble the first layer: Spread about 1 teaspoon of mayo on one bread round. Top it with one round each of provolone cheese and deli ham.
  4. Add the second bread layer: Place another bread round on top of the ham and cheese and spread another teaspoon of mayo over it.
  5. Add the second cheese and ham layer: Top this bread round with another round each of cheese and ham, then add a final bread round on top to complete the double stack.
  6. Repeat assembly: Repeat the layering process until 8 double-stacked mini sandwiches are assembled in total.
  7. Pipe the whipped cream cheese: Fill a small piping bag fitted with a star tip with 4 oz of plain whipped cream cheese. Pipe the cream cheese on top of each sandwich by starting in the center and swirling outward until the tops are fully covered.
  8. Garnish and serve: Add your favorite sandwich garnish such as herbs or a small slice of olive and serve the sandwiches cold as an appetizer.

Notes

  • Use fresh sandwich bread for best texture and taste.
  • Save leftover bread, cheese, and ham scraps for other recipes like savory breakfast muffins or breakfast strata.
  • The sandwiches are best served chilled for easy handling and optimal flavor.
  • Customize the garnish topping for variety – herbs, paprika, or thinly sliced veggies work well.
  • For a lighter option, use low-fat cheese and reduced-fat mayo.
