Ingredients

Caramel and Apple Stars

  • 6 apples
  • 2 1/2 cups sugar (for caramel)
  • 1 cup boiling water (for caramel)

Batter and Filling

  • 1/2 cup sugar
  • 4 eggs
  • 3 tbsp melted butter
  • 1 cup milk
  • 1 tbsp vanilla extract
  • 1 cup flour
  • 1 pinch salt
  • 2 tsp baking powder
  • Slices of the remaining apple bottoms (cored and thinly sliced)

Topping

  • 6 scoops vanilla ice cream

Instructions

  1. Prepare Caramel Apple Stars: Carefully carve small triangular pieces from the tops of 6 apples to create eight-pointed star shapes. Cut off the top inch of the apples with the star pattern and remove small triangles from the bottom of the star slice to complete the design. In a saucepan, heat 2 1/2 cups of sugar gradually, adding 1/2 cup at a time to make caramel. Once the sugar turns a rich amber color, carefully add 1 cup of boiling water and stir. Remove from heat and let the caramel cool. Once cooled, coat the 6 apple stars thoroughly with the caramel sauce.
  2. Prepare Apple Base and Batter: Remove the cores from the remaining apple bottoms and slice them into very thin discs, cutting them in half. Layer these apple slices evenly in a square baking dish until filled. In a mixing bowl, combine 1/2 cup sugar, 4 eggs, 3 tablespoons melted butter, 1 cup milk, and 1 tablespoon vanilla extract. Gradually mix in 1 cup flour, a pinch of salt, and 2 teaspoons baking powder until you achieve a smooth batter. Pour this batter evenly over the stacked apple slices in the baking dish.
  3. Bake the Pie: Preheat the oven to 350 °F (175 °C). Place the baking dish in the oven and bake for 45 minutes, or until the batter is set and golden brown on top.
