- 10-12 hard-boiled eggs
Filling
- 1/4 cup + 2 tablespoons mayonnaise
- 1/4 – 1/2 teaspoon kosher salt, divided
- Pinch of ground black pepper
- 1/2 teaspoon Dijon mustard
- 1 teaspoon yellow mustard
- 3-4 teaspoons pickle juice (preferably bread and butter pickle juice)
- 1/2 teaspoon white vinegar
Garnish
- Paprika
- Dill leaves or chives
Instructions
- Prep Eggs: Peel the hard-boiled eggs and slice each egg in half lengthwise carefully to keep the whites intact.
- Scoop & Mix: Gently remove the yolks with a small spoon and place them in a medium mixing bowl. Add 1/4 cup plus 2 tablespoons of mayonnaise, 1/4 teaspoon kosher salt, a pinch of ground black pepper, 1/2 teaspoon Dijon mustard, 1 teaspoon yellow mustard, 3 teaspoons pickle juice, and 1/2 teaspoon white vinegar. Stir the mixture until smooth. For a creamier texture, use a hand mixer if desired.
- Taste & Adjust: Sample the filling mixture and adjust flavors as needed by adding more kosher salt (up to an additional 1/4 teaspoon), mayonnaise, or pickle juice according to your preferences.
- Fill Eggs: Spoon or pipe the yolk mixture back into the hollowed-out egg whites evenly.
- Garnish: Sprinkle the filled eggs with paprika and top with fresh dill leaves or chopped chives for a fresh herbal note.
- Serve: Chill the deviled eggs if desired and serve as a delicious appetizer or snack.
Notes
- For easier peeling, use eggs that are at least a week old.
- Use a piping bag or zip-top bag with the tip cut off to neatly fill the egg whites.
- Adjust pickle juice quantity based on how tangy you like the filling.
