Ingredients

Chocolate Base

  • 3 tablespoons unsalted butter
  • 6 ounces semi-sweet chocolate (best quality, such as Ghirardelli)
  • 3 large eggs, at room temperature (yolks and whites separated)
  • ½ teaspoon cream of tartar
  • ¼ cup + 2 tablespoons sugar

Whipped Cream

  • ½ cup heavy cream (cold)
  • ½ teaspoon vanilla extract
  • ½ cup heavy cream (cold)
  • 2 teaspoons sugar

Garnish

  • Chocolate shavings


Instructions

  1. Melt Chocolate and Butter: Place the butter and broken chocolate pieces in a medium microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until the chocolate is about 75% melted. Stir to melt completely with residual heat. Alternatively, melt over a double boiler until smooth. Let cool slightly before whisking in egg yolks one at a time, mixing well after each addition. Set aside.
  2. Beat Egg Whites: Using a stand or hand mixer, beat the egg whites on medium-high until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add ¼ cup (50 g) sugar while beating until stiff peaks form. Fold this mixture gently into the chocolate mixture until fully combined. Set aside.
  3. Whip Cream and Combine: In a separate bowl, beat ½ cup cold heavy cream on medium-high speed until it begins to thicken. Add 2 tablespoons sugar and vanilla extract, and beat until medium peaks form. Gently fold the whipped cream into the chocolate mixture, taking care not to overmix. Divide mousse equally into 6 serving glasses, cover, and chill for at least 2 hours until set.
  4. Prepare Topping and Serve: Up to a few hours before serving, whip the remaining ½ cup cold heavy cream with 2 teaspoons sugar until medium peaks form. Dollop this whipped cream over the chilled mousse and garnish with chocolate shavings just before serving.
