Instructions

  1. Whip Egg Yolks and Sugar: In a medium bowl, combine the 4 large egg yolks with 1/4 cup granulated sugar. Using a hand mixer, whip the mixture until it turns pale yellow and fluffy, indicating the sugar is well incorporated and air is beaten in.
  2. Warm Heavy Cream: Pour 3/4 cup of heavy cream into a medium saucepan and heat it over medium heat. Warm the cream gently without letting it boil, ensuring it is hot but not boiling to avoid curdling the eggs.
  3. Temper the Eggs: Slowly pour the warmed heavy cream into the egg yolks and sugar mixture while whisking constantly. This gradual combining prevents the eggs from cooking too quickly and scrambling.
