- 1½ cups granulated sugar
- ¾ cup unsweetened natural cocoa powder (such as Hershey’s)
- ¾ teaspoon salt
- 1½ teaspoons baking powder
- ¾ teaspoon baking soda
- 2 large eggs, (lightly beaten)
- ¼ cup vegetable oil
- ¾ cup sour cream
- 1 teaspoon vanilla extract
- ¾ cup boiling water
For the Frosting
- 8 ounces milk or semi-sweet chocolate, broken into small pieces
- 20 tablespoons (2½ sticks) unsalted butter, softened but still cool
- 1¼ cups confectioners’ sugar
- ½ cup unsweetened natural cocoa powder (such as Hershey’s)
- 1/8 teaspoon salt
- ¾ cup light corn syrup
- 1 teaspoon vanilla extract
Instructions
- Prepare Cupcake Batter: Preheat your oven to 350°F (175°C) and position two oven racks in the center of your oven. Line two 12-cup muffin tins with paper liners. In a stand mixer fitted with the paddle attachment, combine flour, granulated sugar, cocoa powder, salt, baking powder, and baking soda. Mix on low speed for 30 seconds just until combined. Add eggs, vegetable oil, sour cream, and vanilla extract, mixing on low speed until incorporated.
- Mix Batter Thoroughly: Increase the mixer speed to medium and beat for 2 minutes to aerate and develop the batter.
