Description

This Curried Sausages recipe is a quick and flavorful dish combining juicy sausages with a rich, mildly spiced curry sauce. Cooked on the stovetop, it features tender vegetables and a savory curry gravy that’s perfect over mashed potatoes, rice, or noodles for a comforting meal ready in just 20 minutes.

Ingredients

Sausages and Meat

  • 600g / 1.2lb sausages (of choice)

Vegetables and Aromatics

  • 2 garlic cloves, minced
  • 1 onion, halved and sliced
  • 1 carrot, peeled and sliced on the diagonal
  • 1 cup frozen peas

Spices and Seasonings

  • 1 tbsp curry powder (or more to taste)
  • 1 tsp sugar
  • 1/2 tsp salt, plus more to taste
  • 1/2 tsp black pepper

Liquids and Oils

  • 0.5 tbsp oil
  • 3 tbsp flour (any type; see notes for gluten-free options)
  • 2 cups (500ml) chicken stock/broth, low sodium

Instructions

  1. Heat oil: Warm 0.5 tbsp of oil in a large skillet over medium-high heat to prepare for browning the sausages.
  2. Cook sausages: Add the sausages to the hot skillet, turning occasionally to brown them evenly on all sides. Once browned, remove them from the pan. Optionally, slice the sausages diagonally into pieces for easier serving.
  3. Sauté aromatics: In the same skillet, add the minced garlic and sliced onion. Cook for about 2 minutes until the onion becomes translucent and fragrant.
  4. Add curry powder: Sprinkle in 1 tbsp of curry powder and stir continuously for 30 seconds to bloom the spices and release their aroma.
  5. Mix in flour: Add 3 tbsp of flour and continue stirring for another 30 seconds to combine it with the spices and aromatics.
  6. Incorporate stock: Gradually pour in the 2 cups (500ml) of chicken stock while stirring constantly to prevent lumps, creating a smooth sauce base.
  7. Add vegetables and seasonings: Stir in the sliced carrots, 1 tsp sugar, 1/2 tsp salt, and 1/2 tsp black pepper. Mix well to combine all flavors.
  8. Simmer with sausages and peas: Return the sausages and add frozen peas to the skillet. Bring the mixture to a simmer and cook for about 3 minutes, or until the sauce thickens to a gravy-like consistency.
  9. Serve: Serve the curried sausages hot over your choice of mashed potatoes, rice, pasta, or noodles. For a low-carb alternative, mashed cauliflower works wonderfully.

Notes

  • Note 1: Choose your preferred type of sausages; pork, beef, or chicken all work well.
  • Note 2: Adjust the curry powder quantity according to your spice tolerance.
  • Note 3: For gluten-free options, use gluten-free all-purpose flour or cornstarch as a substitute.
  • Using low sodium chicken stock helps control the saltiness of the dish.
  • Slicing sausages before adding them back to the sauce allows for easier portioning and better flavor distribution.
