Crust
- ¾ cup graham cracker crumbs
- 3 tablespoons margarine, melted
- 2 tablespoons brown sugar
Filling
- 8 ounces cream cheese
- 3 eggs, separated
- 1 cup white sugar

- 1 cup heavy cream, whipped
- 1 (10 ounce) package frozen red raspberries, thawed
Instructions
- Prepare the crust: Melt the margarine in the microwave or over medium heat. Remove from heat and combine with brown sugar and graham cracker crumbs. Press the mixture evenly into a 9 x 13 inch baking pan. Bake at 375°F (190°C) for 9 minutes, then set aside to cool.
- Beat egg yolks: In a mixing bowl, beat the egg yolks until thickened.
- Add cream cheese mixture: To the beaten yolks, add cream cheese, white sugar, and salt. Beat together until the mixture is smooth and light in texture. Set aside.
- Whip egg whites: In a clean bowl, beat the egg whites until stiff peaks form.
- Fold in whipped cream: Carefully fold the whipped cream into the stiff egg whites.
- Combine mixtures: Gently fold the whipped cream and egg white mixture into the cream cheese mixture, combining them well without deflating the fluffiness.
- Add raspberries and assemble: Fold half of the thawed raspberries into the filling mixture. Pour this mixture over the baked graham cracker crust in the pan.
- Top and swirl raspberries: Pour the remaining raspberries on top and use a knife to gently swirl them into the filling for a marbled effect.
- Freeze and serve: Freeze the assembled dessert overnight. Serve chilled as a refreshing, creamy sweet treat.
