Description
A refreshing, easy-to-make Cucumber Tomato Avocado Salad featuring fresh garden vegetables tossed with a simple olive oil and lemon dressing. Perfect for a light lunch or as a vibrant side dish.
Ingredients
Vegetables
- 1 lb Roma tomatoes, chopped
- 1 English cucumber (or Persian/garden cucumber), sliced
- 1/2 medium red onion, thinly sliced
- 2 avocados, diced
- 1/4 cup cilantro, chopped
Dressing & Seasoning
- 2 Tbsp extra virgin olive oil (or sunflower oil)
- 2 Tbsp fresh lemon juice (from 1 medium lemon; lime juice can be substituted)
- 1 tsp sea salt (or 3/4 tsp table salt)
- 1/8 tsp black pepper
Instructions
- Prep Veggies: Place the chopped tomatoes, sliced cucumber, thinly sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
- Add Dressing: Drizzle the salad with 2 tablespoons of extra virgin olive oil and 2 tablespoons of fresh lemon juice. Toss gently to combine all the ingredients evenly without mashing the avocado.
- Season and Serve: Just before serving, sprinkle 1 teaspoon of sea salt and 1/8 teaspoon of black pepper over the salad. Toss lightly again to distribute the seasoning to taste, then serve immediately for the freshest flavor.
Notes
- Use ripe avocados for the best creamy texture and taste.
- Substitute lemon juice with fresh lime juice for a slight tang variation.
- Add a pinch of chili flakes or fresh herbs like basil for extra flavor.
- Serve immediately to prevent the avocado from browning.
