Instructions

  1. Prepare the mango: Slice and peel the mangoes by cutting them off the hard center. Cube the mangoes carefully while attached to the peel, then use a spoon to scoop out the cubes. Use any method you find easiest.
  2. Prepare the cucumber and onion: Cube the cucumber and dice the red onion into small pieces, ensuring uniform sizes for a balanced texture.
  3. Make the dressing: In a small food processor, combine olive oil, fresh lime juice, chopped cilantro, honey, salt, garlic powder, cayenne pepper, and black pepper. Process until well blended. Taste and adjust honey or salt as desired.
