Ingredients
Dressing
- 2 TBSP Olive Oil
- 1 TBSP Balsamic Vinegar
- 1 TBSP Dried Oregano
- 1 TBSP Dried Basil
- Dash of Salt
- Dash of Pepper
Salad
- 1 Cucumber, peeled, skin scraped with a fork, sliced thin and diced
- 1½ cups Cherry Tomatoes, quartered
- 8 oz Fresh Mozzarella, sliced into bite-sized pieces or pearl-sized balls
- ½ Large Red Onion, diced (optional)
Instructions
- Prepare the Dressing: In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Mix thoroughly and set aside to allow flavors to meld.
- Prepare the Cucumber: Wash and peel the cucumber. Use a fork to scrape the skin up and down to create texture, then slice the cucumber thinly and dice it. Transfer to a medium-sized bowl.
- Prepare the Tomatoes: Wash the cherry tomatoes and cut them into quarters. Add them to the bowl with the cucumber.
- Prepare the Red Onion: Thinly slice and dice the red onion. If you prefer not to use onion, you may omit this step. Add the onion to the bowl with the other vegetables.
- Prepare the Mozzarella: Slice the fresh mozzarella into bite-sized pieces or use pearl-sized mozzarella balls. Add them to the bowl with the vegetables.
- Toss the Salad: Pour the prepared dressing over the vegetables and mozzarella. Mix well to ensure everything is evenly coated with the marinade.
- Rest and Serve: Allow the salad to sit for 10 minutes before serving to let the flavors combine and the vegetables marinate slightly.
Notes
- You can omit the red onion if you prefer a milder flavor.
- For a fresher herb flavor, substitute dried oregano and basil with fresh herbs if available.
- This salad is best served fresh but can be refrigerated for up to 2 hours before serving.
- Adjust the salt and pepper to taste depending on your preference.
- Using pearl mozzarella balls can make assembly quicker and easier.
