Ingredients

Custard Base

  • 5 large eggs (~50-55g / 2oz each)
  • 1 cup heavy/thickened cream (use half the amount if substituting with milk)
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Fillings

  • 100g (3.5 oz) diced bacon
  • 1 cup shredded cheese (any variety that melts well except mozzarella)
  • 1 green onion, sliced

For Greasing

  • Butter or cooking spray for greasing the pie dish


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 180°C (350°F) or 160°C (320°F) if fan-forced. Lightly grease a 22.5cm (9-inch) pie dish with butter or spray it with oil to prevent sticking.
  2. Mix Custard: In a bowl, thoroughly whisk together the eggs, heavy cream, salt, and black pepper until fully combined and smooth, forming the custard base.
  3. Arrange Fillings: Scatter most of the diced bacon, shredded cheese, and sliced green onions evenly on the bottom of the prepared pie dish for an even distribution of flavors.
  4. Combine and Top: Pour the whisked egg and cream mixture over the fillings in the pie dish. Then sprinkle the remaining diced bacon, cheese, and green onions evenly over the top for a flavorful crustless surface.
  5. Bake: Place the dish in the preheated oven and bake for approximately 35 minutes or until the top is golden brown and the center of the quiche just barely wiggles when gently shaken. Avoid overbaking to keep the custardy texture intact.
  6. Rest: Remove the quiche from the oven and let it rest for about 5 minutes. During this time, it will deflate slightly as it cools down.
  7. Serve: Slice and serve warm. This crustless quiche pairs wonderfully with a simple side salad, can be stuffed into soft rolls, or wrapped into burritos and pan-fried for a crispy variation.

  • If substituting milk for cream, reduce the volume of milk to half to maintain the quiche’s richness.
