Instructions
- Prepare sauces: In a small bowl, stir together soy sauce, toasted sesame oil, and brown sugar to make the stir fry sauce. In a separate small bowl, combine sriracha and mayonnaise for the spicy mayo drizzle.
- Prep aromatics and green onions: Mince the garlic cloves, grate the fresh ginger, and slice the green onions thinly.
- Crush ramen noodles: Without opening the package, crush the ramen noodles into small pieces using a rolling pin or mallet. Discard the seasoning packet once the noodles are crushed and package is opened.
- Chop chicken: Cut the chicken breast into small 1/2-inch pieces to ensure even cooking and easy eating.
- Sauté chicken and aromatics: Heat a large skillet over medium-high heat and add cooking oil. Once hot, add the chicken pieces and sauté for 3-5 minutes until cooked through. Add garlic and grated ginger about halfway through cooking to release their flavors.
- Add coleslaw mix: Stir in the shredded cabbage and carrots, sautéing for about 2 minutes until they begin to soften but remain slightly crisp.
- Add stir fry sauce: Pour the soy-sesame stir fry sauce over the chicken and veggies, cooking for another 1-2 minutes until the cabbage reaches desired tenderness.
