Description

A quick and flavorful Crunchy Chicken Ramen Stir Fry that combines tender chicken pieces, crunchy coleslaw mix, and crushed ramen noodles tossed in a savory soy-sesame stir fry sauce and topped with spicy sriracha mayo. Ready in just 25 minutes, this dish is perfect for a satisfying weeknight dinner.

Ingredients

Sauces

  • 2 Tbsp soy sauce
  • 1 Tbsp toasted sesame oil
  • 1/2 Tbsp brown sugar
  • 1 Tbsp mayonnaise
  • 1 Tbsp sriracha

Main Ingredients

  • 1 boneless, skinless chicken breast (about 2/3 lb.)
  • 2 Tbsp cooking oil
  • 1 14oz. bag coleslaw mix (shredded cabbage and carrots)
  • 2 cloves garlic
  • 1 tsp grated fresh ginger
  • 3 green onions
  • 1 3oz. block ramen noodles (seasoning packet discarded)

Instructions

  1. Prepare sauces: In a small bowl, stir together soy sauce, toasted sesame oil, and brown sugar to make the stir fry sauce. In a separate small bowl, combine sriracha and mayonnaise for the spicy mayo drizzle.
  2. Prep aromatics and green onions: Mince the garlic cloves, grate the fresh ginger, and slice the green onions thinly.
  3. Crush ramen noodles: Without opening the package, crush the ramen noodles into small pieces using a rolling pin or mallet. Discard the seasoning packet once the noodles are crushed and package is opened.
  4. Chop chicken: Cut the chicken breast into small 1/2-inch pieces to ensure even cooking and easy eating.
  5. Sauté chicken and aromatics: Heat a large skillet over medium-high heat and add cooking oil. Once hot, add the chicken pieces and sauté for 3-5 minutes until cooked through. Add garlic and grated ginger about halfway through cooking to release their flavors.
  6. Add coleslaw mix: Stir in the shredded cabbage and carrots, sautéing for about 2 minutes until they begin to soften but remain slightly crisp.
  7. Add stir fry sauce: Pour the soy-sesame stir fry sauce over the chicken and veggies, cooking for another 1-2 minutes until the cabbage reaches desired tenderness.
  8. Finish and serve: Turn off heat, stir in the crushed ramen noodles for crunch, then top with sliced green onions and a drizzle of the sriracha mayo sauce before serving.

Notes

  • Do not overcook the cabbage, as it should remain slightly crisp for the best texture.
  • You can adjust sriracha amount based on preferred spice level.
  • Discard the ramen seasoning packet to avoid excess sodium and preserve flavor control.
  • Using fresh ginger and garlic enhances the flavor but can be substituted with powdered versions if needed.
  • For a vegetarian version, substitute chicken with firm tofu and vegetable oil for cooking.
