Description

This Crockpot Cheeseburger Soup is an ultra-creamy, comforting soup made effortlessly in a slow cooker. Packed with ground beef, potatoes, carrots, celery, and rich cheeses, it delivers a hearty and flavorful meal perfect for family dinners or cozy nights in. The Velveeta and cream cheese added in the last hour create a luscious, cheesy texture that everyone will love.

Ingredients

Main Ingredients

  • 1 lb. ground beef, browned and drained
  • 2 russet potatoes, diced
  • 2 carrots, peeled and diced
  • 3 celery ribs, peeled and diced
  • 1 white onion, diced

Seasonings and Liquids

  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp dried basil
  • 1/2 tsp. garlic powder
  • 3 cups chicken broth

Cheeses

  • 1 lb. Velveeta cheese, cut into cubes
  • 8 oz. cream cheese, cut into cubes

Instructions

  1. Add Ingredients to Slow Cooker: Combine the browned and drained ground beef, diced potatoes, carrots, celery, diced white onion, salt, pepper, dried basil, garlic powder, and chicken broth in the crockpot. Do not add the Velveeta or cream cheese at this stage.
  2. Cook on Low for 7 Hours: Cover the slow cooker with its lid and cook on the LOW setting for 7 hours, avoiding opening the lid during cooking to preserve heat. Alternatively, you can cook on HIGH for 3-4 hours or until the potatoes are tender.
  3. Add Cheeses and Stir: After 7 hours, cut the Velveeta and cream cheese into cubes and add them to the soup in the crockpot. Stir gently to distribute the cheese cubes evenly throughout the soup; they will not melt immediately.
  4. Cook on Low for 1 More Hour: Cover the slow cooker again and cook on LOW for an additional hour to allow the cheeses to melt fully and blend into the soup’s creamy texture.
  5. Final Stir and Serve: Stir the soup thoroughly to ensure the cheese is completely melted and incorporated. Serve hot and enjoy your comforting cheeseburger soup!

Notes

  • Store any leftover soup in an airtight container in the refrigerator for up to 3 days.
  • Reheat leftover soup on the stovetop over medium heat until warmed throughout, stirring occasionally.
  • For a thicker soup, mash some of the potatoes in the crockpot before adding the cheeses.
  • You can customize seasoning to taste or add extra vegetables like peas or corn for variation.
