Description

This Crockpot Acorn Squash recipe offers an effortless and flavorful way to enjoy tender, sweet acorn squash cooked to perfection in a slow cooker. The combination of melted butter, brown sugar, and maple syrup creates a luscious syrup inside each squash half, making it an ideal side dish for fall and winter meals.

Ingredients

Squash

  • 2 medium acorn squash

Syrup Mixture

  • 4 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • 1 tablespoon maple syrup
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Cooking

  • ¼ cup water (for the bottom of the slow cooker)

Instructions

  1. Prepare the Squash: Wash the acorn squash thoroughly. Cut each squash in half from stem to tip and scoop out the seeds and stringy bits using a spoon to create hollow cavities.
  2. Make the Syrup Mixture: In a small bowl, combine melted butter, brown sugar, maple syrup, salt, and black pepper. Stir until the mixture is smooth and well blended.
  3. Set up the Crockpot: Pour ¼ cup of water into the bottom of the slow cooker to maintain moisture during cooking. Place the squash halves inside the crockpot cut side up. You may need to stack them slightly depending on the size of your slow cooker.
  4. Add the Syrup Mixture: Spoon the butter and sugar mixture evenly into each squash cavity, ensuring each half is filled with the flavorful syrup.
  5. Cook the Squash: Cover the crockpot and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the squash is tender and easily pierced with a fork.
  6. Serve: Before serving, spoon some of the buttery syrup from the centers over the squash to add extra moisture and sweetness.

Notes

  • For best results, use medium-sized acorn squash for even cooking.
  • You can adjust the sweetness by adding more or less brown sugar and maple syrup to taste.
  • To make this recipe vegan, substitute butter with a plant-based alternative.
  • The slow cooker method allows for hands-off cooking and tender results.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
