Description

Crock Pot Sloppy Joe Hash Brown Casserole is a comforting and easy-to-make dish that combines layers of cheesy hash browns with savory ground beef and tangy sloppy joe sauce. Cooked low and slow in a crock pot, this casserole offers a hearty, melty meal perfect for busy days or family dinners.

Ingredients

Hash Brown Layer

  • 32 ounce package frozen shredded hash brown potatoes, slightly thawed
  • 10.75 ounce can condensed cheddar cheese soup (can use low or no sodium)
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • ½ teaspoon pepper

Sloppy Joe Mixture

  • 1 pound ground beef
  • ½ small onion, finely diced
  • 15.5 ounce can sloppy joe sauce (like Manwich)

Topping

  • 1 cup shredded cheddar cheese
  • Optional: dried parsley flakes for garnish

Instructions

  1. Prepare the crock pot: Spray a 5-6 quart oval crock pot (slow cooker) with nonstick cooking spray to prevent sticking.
  2. Make the hash brown mixture: In a large bowl, combine slightly thawed frozen shredded hash browns, condensed cheddar cheese soup, lightly beaten egg, salt, and pepper. Stir well until fully mixed.
  3. Layer the hash browns: Spread the hash brown mixture evenly in the bottom of the prepared crock pot.
  4. Cook the beef mixture: In a large skillet over medium heat, brown and crumble ground beef along with diced onion. Drain excess grease, then return mixture to the pan.
  5. Add sloppy joe sauce: Stir sloppy joe sauce into the beef and onion mixture until thoroughly combined and heated through.
  6. Assemble layers: Spoon the sloppy joe mixture evenly over the hash brown layer in the crock pot.
  7. Cook the casserole: Cover the crock pot and cook on low for about 4 to 4 ½ hours until the casserole is heated through and hash browns are tender.
  8. Add cheese topping: About 10 minutes before the end of cooking, sprinkle shredded cheddar cheese on top of the casserole. Cover and allow cheese to melt.
  9. Serve: Optionally, garnish with dried parsley flakes for color and serve hot.

Notes

  • Use low or no sodium cheddar cheese soup to reduce sodium content.
  • Be sure to slightly thaw hash browns for easier mixing and even cooking.
  • Drain excess grease after browning ground beef to keep casserole from being too greasy.
  • Make sure the crock pot is well sprayed to prevent sticking and facilitate easy serving.
  • Optional parsley flakes add a nice visual touch but can be omitted.
