Instructions
- Prepare the Potatoes: Slice 3 pounds of russet potatoes into 1/4 inch thick rounds. You can slice them by hand or use a mandolin for even pieces. Set the sliced potatoes aside.
- Make the Sauce: In a small pot over low heat, combine 1 cup heavy whipping cream, 1/4 cup low-sodium chicken broth, 4 tablespoons unsalted butter, 5 minced garlic cloves, 1 teaspoon salt, and 1 teaspoon black pepper. Stir occasionally until the butter melts completely. Avoid boiling. Alternatively, melt the ingredients in the microwave carefully. Remove from heat once combined.
- Layer the Potatoes: In the crock pot, place one third of the sliced potatoes as the first layer.
- Add Sauce: Pour half a cup of the prepared cream and butter sauce evenly over the potato layer.
- Add Cheese: Sprinkle one third of the shredded cheddar cheese and Parmesan cheese evenly on top of the sauce layer.
- Repeat Layers: Repeat layering two more times with the remaining potatoes, sauce, and cheeses, building up the dish in thirds.
