Description

Tender and flavorful baby back ribs slow-cooked to perfection in a crock pot and finished under the broiler with a tangy homemade barbecue sauce glaze. This easy recipe delivers fall-off-the-bone ribs with minimal effort, ideal for a comforting family meal.

Ingredients

Ribs

  • 2 racks baby back ribs (about 3 to 4 pounds)
  • 1 onion, sliced
  • 4 cloves garlic, sliced
  • ½ cup water
  • 2 to 3 tablespoons rib rub (store-bought or homemade)

Sauce

  • ¼ cup ketchup
  • ½ cup chili sauce
  • ½ cup barbecue sauce of choice

Homemade Rib Rub (optional)

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional for heat)

Instructions

  1. Prepare the rib rub: If making the homemade rib rub, combine all the spice ingredients together in a bowl until well mixed.
  2. Remove silver membrane: On the back side of the ribs, peel off the silver skin membrane to enhance tenderness and allow spices to penetrate better.
  3. Apply the rub: Generously rub the spice mixture over both sides of the ribs for even flavor coverage.
  4. Arrange in slow cooker: Place the sliced onion and garlic at the bottom of the crock pot, pour in the water, then lay the ribs on top to infuse aroma and moisture.
  5. Slow cook the ribs: Cook on high for 4 hours or low for 8 hours until the ribs are fork-tender and cooked through.
  6. Preheat broiler: While ribs cook, preheat your oven’s broiler to prepare for finishing the ribs with sauce.
  7. Mix the sauce: In a small bowl, combine ketchup, chili sauce, and barbecue sauce, stirring until blended.
  8. Glaze and broil: When ribs are done, brush the sauce mixture all over the ribs and place them under the broiler for 3 to 5 minutes, or until the sauce is caramelized and slightly charred for added depth of flavor.

Notes

  • You can customize the rib rub spices to your taste or use a pre-made store-bought version.
  • Removing the silver membrane is important for tenderness and ensures seasoning penetrates well.
  • Broiling at the end adds a smoky char and sticky glaze, but you can also finish these on a hot grill if preferred.
  • If you don’t have a slow cooker, ribs can be cooked covered in a low oven (275°F) for about 3 to 4 hours as an alternative method.
  • Let ribs rest a few minutes before cutting to retain juices.
