Ingredients
Main Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 12 ounce bag frozen corn
- 4 medium Yukon Gold potatoes, diced into 1-inch chunks
- 15 ounce can red kidney beans, drained and rinsed
- 15 ounce can black beans, drained and rinsed
- 10.5 ounce can cream of chicken soup
- 10 ounce can mild Rotel (diced tomatoes with green chiles)
- 2 teaspoons minced garlic
- 2 cups shredded cheddar cheese (can use more or less, to taste)
Instructions
- Brown the Beef and Onions: Add ground beef and diced onion to a large skillet over medium heat. Cook and crumble the beef until browned and onions are softened. Drain excess grease.
- Season the Meat: Stir in smoked paprika, salt, and pepper into the cooked beef mixture. Transfer the seasoned beef to a 6-quart crock pot.
- Add Remaining Ingredients: Add frozen corn, diced Yukon Gold potatoes, red kidney beans, black beans, cream of chicken soup, mild Rotel, and minced garlic to the crock pot. Stir everything to combine evenly.
- Cook the Casserole: Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the potatoes are tender and all flavors meld together.
- Add Cheese: Sprinkle shredded cheddar cheese evenly on top of the casserole. Cover and cook for an additional 10 to 15 minutes until the cheese melts.
- Serve: Serve hot, topped with sour cream and sliced green onions as desired. Enjoy this comforting cowboy casserole!
Notes
- Feel free to swap the cream of chicken soup for cream of mushroom or cream of celery if preferred.
- You can customize the beans by using pinto or cannellini beans instead of red kidney or black beans.
- To make this recipe quicker, pre-cook the potatoes slightly before adding to the crock pot.
- Leftovers keep well in the fridge for up to 4 days and reheat nicely.
- For a spicier version, use spicy Rotel or add a jalapeño with the garlic.
