Ingredients
Main Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 12 ounce bag frozen corn
- 4 medium Yukon Gold potatoes, diced into 1-inch chunks
- 15 ounce can red kidney beans, drained and rinsed
- 15 ounce can black beans, drained and rinsed
- 10.5 ounce can cream of chicken soup
- 10 ounce can mild Rotel (diced tomatoes with green chiles)
- 2 teaspoons minced garlic
- 2 cups shredded cheddar cheese (adjust to taste)
Instructions
- Brown the Meat: Add the ground beef and diced onion to a large skillet over medium heat. Cook and crumble the meat until it is browned and the onions are softened, about 7-10 minutes.
- Season and Drain: Drain off any excess grease from the skillet. Season the browned beef with smoked paprika, salt, and pepper, stirring well to combine the seasoning evenly.
- Transfer to Crock Pot: Transfer the seasoned beef and onion mixture into a 6-quart crock pot, spreading it evenly on the bottom.
- Add Remaining Ingredients: Add the frozen corn, diced Yukon Gold potatoes, drained red kidney beans, drained black beans, cream of chicken soup, mild Rotel, and minced garlic into the crock pot. Stir gently to combine all ingredients thoroughly.
- Cook: Cover the crock pot and cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the potatoes are tender and all flavors are melded.
- Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover and cook for an additional 10 to 15 minutes until the cheese has fully melted.
- Serve: Serve hot, optionally topped with sour cream and sliced green onions for added flavor and freshness. Enjoy your comforting cowboy casserole!
Notes
- You can substitute the ground beef with ground turkey or chicken for a leaner option.
- Feel free to add other vegetables such as bell peppers or jalapeños to spice it up.
- Adjust the amount of cheese to your preference or use a cheese blend for extra flavor.
- If you prefer a vegetarian version, omit the meat and use vegetable broth and cream of mushroom soup instead of cream of chicken.
- To save time, you can prepare the meat mixture the night before and refrigerate it before adding to the crock pot.
- Make sure the potatoes are cut into uniform pieces to ensure even cooking.
