Description

This Crock Pot Chicken Pot Pie Pasta is a comforting one-pot meal combining tender chicken, creamy cheeses, mixed vegetables, and perfectly cooked pasta. Slow-cooked all day in a savory blend of chicken broth, spices, and classic cream of chicken soup, it delivers the flavors of traditional chicken pot pie in an easy pasta dish ideal for busy weeknights or cozy family dinners.

Ingredients

Protein & Dairy

  • 1 ½ pounds boneless, skinless chicken breasts
  • ½ cup sour cream
  • 8 ounces cream cheese
  • 1 ½ cups cheddar cheese, grated

Liquids & Soups

  • 1 cup low-sodium chicken broth
  • 2 cans cream of chicken soup (10.5 ounces each)

Vegetables & Seasonings

  • 3 teaspoons garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • 12 ounce bag frozen mixed vegetables

Pasta

  • 16 ounces penne pasta (or small noodle pasta)

Instructions

  1. Prepare the sauce base: In the crock pot, combine chicken broth, cream of chicken soup, minced garlic, black pepper, Italian seasoning, paprika, onion powder, dried thyme, and frozen mixed vegetables. Stir until well combined to form a flavorful sauce.
  2. Add the chicken: Place the boneless, skinless chicken breasts into the crock pot with the sauce and vegetables. Toss the chicken to coat evenly with the mixture.
  3. Slow cook the chicken: Cover the crock pot and cook on high for 3-4 hours or on low for 5-6 hours, until the chicken is fully cooked and tender.
  4. Shred the chicken and add cheeses: Remove the chicken breasts from the crock pot and shred them using two forks. Return the shredded chicken to the crock pot. Add the sour cream, cream cheese, and grated cheddar cheese. Stir until everything is combined and cook for an additional 30 minutes to melt the cheeses and blend flavors.
  5. Cook the pasta: While the cheese mixture is cooking, prepare the pasta according to the package directions until al dente. Drain the pasta well.
  6. Combine pasta and sauce: Add the cooked pasta to the crock pot and toss everything together until the pasta is fully coated in the creamy chicken pot pie sauce. Serve immediately for a hearty, comforting meal.

Notes

  • You can substitute rotini or shells for penne pasta if preferred.
  • For extra flavor, add a splash of white wine to the sauce before cooking.
  • Use low-fat sour cream and cheeses to reduce fat content.
  • Frozen mixed vegetables usually include peas, carrots, and corn, but you can customize with your favorite veggies.
  • Make sure to not overcook the pasta so it holds texture after mixing.
