Description

Taco Potatoes are a delicious and hearty meal featuring crispy, seasoned diced potatoes topped with flavorful ground beef cooked with taco seasoning. This easy-to-make dish is perfect for a comforting dinner and can be customized with classic taco toppings like pico de gallo, guacamole, and sour cream.

Ingredients

Potatoes and Seasoning

  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Ground Beef and Taco Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water (amount as called for on the taco seasoning packet)

Toppings

  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream

Instructions

  1. Prepare the Potatoes: Coat 2 pounds of peeled and small diced russet potatoes with 3-4 tablespoons of oil. Sprinkle 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder over the potatoes. Mix thoroughly to ensure even coating of the seasoning on all the potato pieces.
  2. Cook Potatoes in Air Fryer: Place the seasoned potatoes in the air fryer basket and cook at 400°F for 18-20 minutes. Shake the basket 2-3 times during cooking to cook the potatoes evenly and make them crispy on all sides.
  3. Cook Ground Beef: While the potatoes cook, brown and crumble 1 pound of ground beef in a skillet over medium heat. Once browned, drain any excess grease from the meat.
  4. Add Taco Seasoning: Stir in 1 packet of taco seasoning along with the water amount specified on the seasoning packet. Follow the packet instructions and cook until the seasoning is well combined and the liquid is mostly absorbed. Remove from heat once done.
  5. Assemble the Taco Potatoes: To serve, layer the cooked crispy potatoes on a plate or serving dish, top with the seasoned ground beef, sprinkle with 8 ounces of Mexican shredded cheese, and add optional toppings such as pico de gallo, guacamole, and sour cream as desired.

Notes

  • You can adjust the seasoning quantities to your taste if you prefer more or less spice.
  • Make sure to shake the air fryer basket a few times during cooking to ensure potatoes crisp evenly.
  • Drain excess grease from beef to keep the dish from becoming too oily.
  • This dish can be served as a main course for dinner or a hearty lunch.
  • Optional toppings add a fresh and creamy contrast but can be omitted if desired.
