These crispy smashed potatoes are a delicious and easy-to-make side dish featuring tender boiled potatoes that are smashed, seasoned with garlic and onion powder, and roasted to golden perfection with olive oil and fresh herbs.

- 2 pounds small yellow potatoes
Seasonings
- 2 teaspoons sea salt (divided)
- 1½ teaspoons garlic powder
- ¾ teaspoon onion powder
- Freshly ground black pepper to taste

- 2 tablespoons extra-virgin olive oil (plus more for coating the pans)
- 1 tablespoon finely chopped fresh herbs (parsley, chives, and/or dill)

- Parmesan cheese (optional)
Instructions
- Preheat and prepare pans: Preheat your oven to 425°F (220°C). Liberally coat two baking sheets with extra-virgin olive oil to prevent sticking and help the potatoes crisp up.
- Boil the potatoes: Place the potatoes in a large pot with 1 teaspoon of sea salt. Add enough water to cover the potatoes by about 1 inch. Bring the water to a boil and cook the potatoes until they are fork-tender, approximately 15 to 20 minutes. Drain and let them cool slightly so they can be handled safely.
- Smashed and season: Arrange each potato on the oiled baking sheets. Using the back of a measuring cup or a flat utensil, gently press down on each potato to flatten it to about ¼-inch thickness, being careful not to tear them apart. Drizzle the smashed potatoes with the remaining olive oil, then sprinkle evenly with the garlic powder, onion powder, remaining 1 teaspoon salt, and freshly ground black pepper.
- Roast the potatoes: Place the baking sheets in the preheated oven and roast the potatoes for 25 to 35 minutes. Halfway through cooking, rotate the pans to ensure even browning. Roast until the potatoes are golden brown and crisp around the edges.
- Finish and serve: Once roasted, season the potatoes to taste with additional sea salt or flaky sea salt if desired. Sprinkle the chopped fresh herbs and add parmesan cheese if using, then serve warm as a flavorful side dish.
