Description
This Crispy Rice Salad is a delightful combination of warm, crunchy baked rice tossed with fresh vegetables and a flavorful sesame dressing. It’s a quick and easy recipe perfect for a light lunch or a refreshing side dish with an Asian-inspired twist.
Ingredients
For the Crispy Rice
- 2 cups cooked rice (cold)
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
For the Salad
- 2 cups coleslaw mix (or shredded cabbage)
- 4 mini cucumbers, sliced
- 1 cup edamame (shelled, cooked, and cooled)
- 4 green onions, sliced
- ¼ cup chopped fresh cilantro (or parsley or mint)
- ⅓ cup sesame dressing (more to taste)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. This will ensure the rice crisps evenly and doesn’t stick.
- Prepare and Bake Rice: In a medium bowl, toss the cold cooked rice with toasted sesame oil and soy sauce until all grains are coated. Spread the rice in an even layer on the prepared baking sheet. Bake for about 18 to 20 minutes, stirring halfway through to crisp the rice evenly. Let it cool completely so it becomes crunchy.
- Mix Salad Ingredients: In a large bowl, combine the coleslaw mix, sliced mini cucumbers, cooked and cooled edamame, sliced green onions, and chopped fresh cilantro (or your choice of fresh herbs).
- Add Crispy Rice and Dressing: Add the cooled crispy rice to the vegetable mixture and drizzle with the sesame dressing. Use more dressing as needed to suit your taste.
- Toss and Serve: Gently toss all ingredients together until just combined. Serve immediately to enjoy the contrast between crunchy rice and fresh vegetables for the best texture and flavor.
Notes
- Use cold leftover rice for best results; fresh cooked rice is too moist to crisp properly.
- You can substitute the coleslaw mix with shredded cabbage or your favorite crunchy veggies.
- Try different fresh herbs like parsley or mint if cilantro isn’t preferred.
- Sesame dressing can be store-bought or homemade for a fresher taste.
- Serve immediately after tossing to maintain the crispy texture of the rice.
