Ingredients

Potatoes

  • 2 pounds petite Yukon gold potatoes, halved or quartered
  • 2 tablespoons olive oil
  • Kosher salt and pepper, to taste

Ground Turkey Seasoning

  • 1 pound lean ground turkey (can substitute with beef)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • Kosher salt and pepper, to taste
  • Optional: 1 teaspoon olive oil (if needed for cooking turkey)

Toppings

  • Quick pickled onions
  • Shredded lettuce
  • Chopped tomatoes
  • Sliced jalapeños
  • Crushed tortilla chips
  • Fresh cilantro
  • Lime wedges, for spritzing
  • Optional: shredded cheddar cheese (for topping the potatoes)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the potatoes.
  2. Prepare the potatoes: In a large bowl, toss the halved or quartered Yukon gold potatoes with olive oil, kosher salt, pepper, and optionally garlic powder, ensuring they are well coated.
  3. Roast the potatoes: Spread the potatoes in a single layer on a baking sheet. Roast for 25 minutes, then flip and toss them gently, continuing to roast for an additional 15 to 20 minutes until they are deeply golden and crispy. For a cheesy twist, sprinkle shredded cheddar on top during the last 5 minutes of roasting.
  4. Cook the ground turkey: While potatoes roast, heat a skillet over medium-high heat. If needed, add 1 teaspoon of olive oil. Add the ground turkey, breaking it apart with a wooden spoon, and cook until it begins to brown.
  5. Season the turkey: Add the ground cumin, smoked paprika, garlic powder, chili powder, kosher salt, and pepper. Stir well to evenly distribute the spices and continue cooking until the turkey is fully browned and cooked through.
  6. Make the turkey saucier (optional): For a saucier texture, prepare a slurry by combining ½ cup cold water or stock with 1½ tablespoons all-purpose, masa, or whole wheat flour in a shaker cup. Shake well to combine. Stream the slurry slowly into the turkey skillet over low heat, stirring continuously. Cook for about 10 minutes until thickened.
  7. Assemble the taco bowls: Place the roasted potatoes as the base in serving bowls. Add the cooked ground turkey and cheese (if using) on top. Garnish generously with quick pickled onions, shredded lettuce, chopped tomatoes, sliced jalapeños, crushed tortilla chips, and fresh cilantro.
  8. Finish with lime: Spritz fresh lime juice over the assembled bowls to add brightness and tang.
  9. Serve and enjoy: Dig in immediately for a delicious and crispy taco bowl experience.

Notes

  • You can substitute ground turkey with lean ground beef if preferred.
  • Adding cheese to the roasted potatoes is optional but adds a delicious melty layer.
  • If you prefer a moister ground turkey, use the slurry method to create a savory sauce.
  • Quick pickled onions can be made ahead of time and stored in the refrigerator.
  • Adjust spice levels by adding more or less chili powder and jalapeños according to taste.
  • This recipe is easily scalable for more servings.
