Description

These Crispy Parmesan Thyme Sweet Potato Stacks are a flavorful and elegant side dish perfect for any occasion. Thinly sliced sweet potatoes are tossed with garlic butter, fresh herbs, and a blend of parmesan and manchego cheeses, then roasted in a muffin tin until tender and golden. The layers crisp up beautifully while remaining soft inside, creating a delicious combination of textures and savory flavors.

Ingredients

Butter and Garlic

  • 1 stick (1/2 cup) salted butter
  • 1-2 cloves garlic, grated

Sweet Potato Stacks

  • 6 medium sweet potatoes, cut into 1/8 inch thick slices
  • 2 tablespoons chopped fresh thyme
  • 2 teaspoons chopped fresh oregano
  • 1/2 cup grated parmesan cheese
  • 1/4 cup grated manchego cheese
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin to prevent sticking and ensure easy removal of the sweet potato stacks.
  2. Melt Butter and Garlic: In a small pan over medium heat, melt the salted butter and stir in the grated garlic. Cook until fragrant, about 5 minutes, taking care not to brown the garlic to maintain a mellow flavor.
  3. Toss Ingredients: In a large bowl, combine the thinly sliced sweet potatoes with the garlic butter, chopped fresh thyme, oregano, grated parmesan, grated manchego, and season generously with kosher salt and black pepper. Toss everything well so each slice is evenly coated.
  4. Assemble Stacks: Layer the sweet potatoes evenly in the prepared muffin tin, stacking slices all the way to the top of each cup. The sweet potatoes will shrink during cooking, so it’s important to fill each cup completely for full, tall stacks.
  5. Roast Covered: Cover the muffin tin with foil to trap steam and place it on a baking sheet. Roast in the preheated oven for 40 minutes to allow the potatoes to cook through and soften.
  6. Uncover and Crisp: Remove the foil and continue roasting for an additional 20-25 minutes, or until the sweet potatoes are tender and the tops are golden and crispy.
  7. Release and Serve: Run a butter knife around the edge of each stack to loosen it from the tin. Carefully remove and transfer to a serving platter. Sprinkle a little sea salt on top for added flavor and serve immediately to enjoy the crisp texture.

Notes

  • Make sure to slice the sweet potatoes thinly and uniformly for even cooking.
  • Using a mandoline slicer can speed up prep and create consistent slices.
  • If you prefer, use unsalted butter and adjust seasoning accordingly.
  • Fresh herbs can be substituted or omitted based on preference.
  • These stacks can be made ahead and reheated in a 350°F oven until warm and crispy.
  • For a sharper flavor, add a sprinkle of cayenne pepper or smoked paprika to the seasoning mix.
