Description

These Crispy Lentil Veggie Patties Sandwiches are a delicious vegan and high-protein option perfect for a wholesome meal. Made from cooked lentils, potatoes, carrots, and onions blended with spices and fresh parsley, these patties are shallow-fried to a golden crisp and served in Turkish-style bread rolls with refreshing tzatziki, tomato slices, and a flavorful onion-parsley salad. Ideal for a satisfying lunch or dinner, they combine nutritious ingredients with vibrant Mediterranean flavors.

Ingredients

Main Ingredients

  • 2 cups dry green or brown lentils
  • 1 large potato, peeled
  • 1 onion, peeled
  • 2 whole carrots, peeled
  • Water to cover
  • Salt to taste
  • 1 cup breadcrumbs (add more if needed)
  • 1 cup chopped fresh parsley
  • 1-2 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Optional: chili flakes
  • Oil for shallow frying

Sandwich Assembly

  • Turkish-style bread rolls or pita
  • Yogurt-based sauce like tzatziki
  • Tomato slices
  • Onion slices mixed with parsley and sumac
  • Grilled long green peppers (optional)
  • Pickles (optional)

Instructions

  1. Cook the lentils and vegetables: Add the lentils to a large pot. Place the whole peeled potato, peeled onion, and peeled carrots on top. Cover everything with water, season lightly with salt, and cook over medium heat until the lentils and vegetables are soft, about 25–30 minutes.
  2. Mash everything: Drain any excess water from the pot. Mash the lentils, carrots, onion, and potato together directly in the pot until the mixture is mostly smooth but retains some chunkiness for texture.
  3. Make the mixture: Transfer the mashed mixture to a bowl. Add the breadcrumbs, chopped fresh parsley, paprika, ground cumin, salt, pepper, and optional chili flakes. Mix thoroughly until the mixture holds together well. Add additional breadcrumbs if the mixture is too wet to shape.
  4. Shape patties: Form the mixture into oval or square patties by firmly pressing with your hands so they will hold their shape during frying.
  5. Fry: Heat oil in a pan over medium heat. Once hot, fry the patties on both sides until they develop a golden brown, crispy crust. Remove and drain on paper towels if desired.
  6. Assemble sandwiches: Slice the Turkish bread rolls or pita. Add a generous layer of yogurt-based sauce like tzatziki, followed by tomato slices, the onion-parsley-sumac mix, 3–4 lentil patties, and optional grilled long green peppers and pickles. Press lightly and serve warm for best flavor.

Notes

  • You can add more breadcrumbs if patties crumble during frying.
  • Use fresh parsley for the best flavor in the mixture and onion salad.
  • Grilled green peppers and pickles are optional but add great flavor contrast.
  • This recipe yields 22 small patties, perfect for making multiple sandwiches or serving as snacks.
  • Use a neutral oil with a high smoke point for shallow frying, such as vegetable or canola oil.
  • For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs.
  • Adjust seasoning and chili flakes according to your heat preference.
