Description

These Crispy Keto Zucchini Fries are a delicious low-carb snack or side dish, perfect for keto and low-carb diets. Made with almond flour and parmesan for a crunchy coating, these fries can be air fried, baked, or pan-fried to golden perfection, providing a healthy and flavorful alternative to traditional fries.

Ingredients

Zucchini Fries Ingredients

  • 1 pound zucchini (about 2 large)
  • 1 cup finely ground almond flour
  • 1 cup finely grated parmesan
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 eggs (beaten)
  • Avocado oil (for cooking and spraying)
  • Olive oil (for frying, optional)

Instructions

  1. Prepare the Zucchini: Trim the ends off the zucchini. Cut each zucchini in half crosswise, then in half lengthwise. Cut each piece into 4 sticks. If there are large seeds, trim them off for a better texture.
  2. Make the Breading Mixture: In a shallow dish, combine the almond flour, grated parmesan, Italian seasoning, sea salt, and black pepper. Mix thoroughly to distribute all seasonings evenly.
  3. Prepare the Egg Wash: In a separate shallow dish, beat the two eggs until smooth. This will be used to help the breading stick to the zucchini fries.
  4. Coat the Zucchini: Dip each zucchini stick first into the beaten eggs, then coat it thoroughly with the almond flour mixture. Use your hands to press the breading into the zucchini so it adheres well.
  5. Air Fry Method: Preheat your air fryer to 350°F (175°C). Lightly spray the coated zucchini fries with avocado oil. Arrange the fries in a single layer in the air fryer basket, using liners if desired. Cook in batches for 12 to 16 minutes until golden and crispy.
  6. Baking Method: Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper. Arrange the coated zucchini fries in a single layer without overcrowding. Spray them with avocado oil. Lower the oven temperature to 350°F (175°C) and bake for 15 to 20 minutes until crisply browned.
  7. Frying Method: Pour olive oil into a large skillet until it is about 1/2 inch deep. Heat the oil to 350°F (175°C). Fry the zucchini fries in batches for approximately 2 ½ minutes each, or until golden brown. Drain on paper towels before serving.

Notes

  • You can omit seeds from the zucchini if they are large and watery to improve texture.
  • Using avocado oil spray helps to keep fries crispy without adding too much fat.
  • Baking requires careful arrangement to avoid overcrowding for even crisping.
  • Frying offers the crispiest result but adds more calories.
  • Air fryer liners are optional but help with easier cleanup.
  • Best served immediately for maximum crispiness.
