Ground Beef Mixture

  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce

Tacos

  • 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack, shredded
  • 10 corn tortillas
  • 1 tablespoon olive oil


Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C) to get it ready for baking the tacos until they achieve a golden crisp texture.
  2. Cook the Ground Beef: Heat a skillet over medium-high heat and brown the ground beef, breaking it up into small pieces as it cooks. Once browned, stir in the taco seasoning and red enchilada sauce. Allow the mixture to simmer briefly, about 2-3 minutes, then remove from heat to prevent overcooking.
  3. Soften the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30 to 60 seconds until pliable. This prevents them from cracking when folded.
  4. Assemble the Tacos: Brush one side of each tortilla with olive oil. Place each tortilla on a baking sheet with the oiled side down. On half of the tortilla, layer 2 tablespoons of shredded cheese, then top with 1/4 cup of the cooked beef mixture, and finish with another 2 tablespoons of cheese.
