Description

Crispy Cornflake Chicken Tenders are a delicious and easy-to-make dish featuring tender chicken breast strips coated in a flavorful yogurt and spice mixture, then breaded with crunchy crushed cornflakes and fried to golden perfection. This recipe combines the creamy tang of yogurt with the crispy texture of cornflakes, resulting in a mouthwatering meal perfect for a quick lunch or dinner.

Ingredients

Chicken

  • 2 chicken breasts

Coating Mixture

  • 150 ml plain yogurt
  • 1 egg
  • 2 tbsp flour
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • salt and pepper (to taste)

Bread Crumbs

  • 150 g cornflakes (crushed)

For Frying

  • sunflower oil (for frying)

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into even strips to ensure they cook quickly and stay tender throughout the frying process.
  2. Make the Coating: In a bowl, whisk together the plain yogurt, egg, flour, salt, pepper, sweet paprika, and garlic powder until you achieve a smooth, well-combined mixture.
  3. Coat the Chicken: Add the chicken strips to the yogurt-spice blend and mix well to ensure each piece is fully coated with the mixture.
  4. Bread with Cornflakes: Pulse the cornflakes briefly in a food processor or mixer until they are crushed but still slightly chunky. Press each yogurt-coated chicken strip firmly into the crushed cornflakes so it’s well covered on all sides.
  5. Fry Until Golden: Heat sunflower oil in a deep frying pan over medium heat. Fry the chicken strips in batches, turning occasionally, until they become golden brown and crispy on all sides. This typically takes 4-6 minutes per batch depending on the thickness.
  6. Drain and Rest: Remove the fried chicken tenders from the oil and place them on paper towels to absorb any excess oil. Let them rest briefly before serving for optimal crispiness.

Notes

  • Ensure chicken strips are cut to similar sizes for even cooking.
  • Do not over-crush the cornflakes to maintain a crunchy texture.
  • Use medium heat to avoid burning the coating while ensuring chicken cooks through.
  • Serve with your favorite dipping sauce like honey mustard or barbecue sauce for added flavor.
  • This recipe can be doubled easily for more servings.
