Ingredients

For the Roasted Chickpeas

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

For the Dressing

  • 1 tablespoon freshly squeezed lemon juice (from one lemon)
  • 3 tablespoons extra-virgin olive oil
  • 1 small garlic clove, minced
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper

For the Salad

  • 5 oz dark leafy greens mix (baby kale, arugula, chard, spinach, etc.)
  • ½ cup shaved Parmigiano-Reggiano


Instructions

  1. Make the roasted chickpeas: Preheat your oven to 425°F (220°C) and position a rack in the middle of the oven. Line a baking sheet with heavy-duty aluminum foil for easy cleanup. Spread the drained and rinsed chickpeas evenly on the baking sheet. Drizzle with 1 tablespoon of extra-virgin olive oil, then sprinkle with ½ teaspoon salt and ¼ teaspoon freshly ground black pepper. Toss the chickpeas to coat them evenly with the oil and seasoning. Roast them in the oven for 20 to 25 minutes, stirring once halfway through, until they become golden brown and crispy. Once done, remove them from the oven and allow to cool.

Prepare the dressing: In a large mixing bowl, whisk together 1 tablespoon freshly squeezed lemon juice, 3 tablespoons of extra-virgin olive oil, minced garlic clove, ¼ teaspoon salt, and ⅛ teaspoon freshly ground black pepper. This zesty dressing will coat the greens and bring flavor to the salad.
  3. Toss the salad: Add the 5 ounces of mixed dark leafy greens to the bowl with the dressing. Toss thoroughly to ensure the greens are evenly coated. Taste the salad and adjust the seasoning by adding more salt if desired.
