Chickpea Mixture
- 1 can (400 g) chickpeas (drained, rinsed, and very well dried)
- 1 small onion (finely chopped or grated)
- 3 cloves garlic (pressed)
- 1 egg
- 3 tbsp finely grated Parmesan cheese
- 4 tbsp flour (all-purpose or chickpea flour)
- 1 tbsp lemon juice
- 3 tbsp fresh parsley (finely chopped)
- ½ tsp salt (adjust to taste; Parmesan is salty)
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp baking soda

Instructions
- Mash the chickpeas: Place the drained and very well dried chickpeas in a large bowl and mash them with a fork or potato masher until crumbly. Ensure the texture is coarse with some small pieces remaining but no whole chickpeas.
- Mix the batter: Add the finely chopped or grated onion, pressed garlic, egg, grated Parmesan cheese, flour, lemon juice, salt, black pepper, paprika, smoked paprika, cumin, baking soda, and chopped parsley to the mashed chickpeas. Mix everything thoroughly until fully combined. The mixture should be soft yet able to hold together when formed.
- Rest the mixture: Let the mixture rest for 10 minutes at room temperature. This resting period allows the flour to hydrate, which improves the texture and binding of the fritters.
- Cook the patties: Heat a thin layer of oil in a skillet over medium heat. Using a spoon, scoop portions of the batter and gently slide them into the hot oil, shaping lightly as needed with a second spoon. Fry the fritters for 3 to 4 minutes on each side, or until they are golden brown and cooked through. Remove and drain on paper towels before serving.
