Description

Crispy Cajun Boudin Balls are a flavorful Louisiana-inspired appetizer featuring spicy boudin sausage filling coated in seasoned flour, egg wash, and crunchy panko breadcrumbs, then deep-fried to golden perfection. Ingredients

Boudin Balls

  • 3 lbs Boudin sausage (casings removed and filling crumbled)
  • 1 cup all-purpose flour
  • 2 tsp Cajun seasoning (my version or Tony Chachere’s)
  • 2 cups Panko breadcrumbs
  • 2 large eggs
  • 1/4 cup milk
  • 2 cups vegetable oil (for deep-frying)


Instructions

  1. Prepare the dredging stations: In a shallow bowl, mix the all-purpose flour with the 2 teaspoons of Cajun seasoning thoroughly. In a second shallow bowl, place the panko breadcrumbs. In a third shallow bowl, whisk together the eggs and milk until well combined.
  2. Shape and coat the boudin balls: Using a 2-tablespoon scooper or your wet hands to prevent sticking, form the crumbled boudin sausage mixture into balls roughly the size of unshelled walnuts. Roll each ball first in the seasoned flour, shaking off any excess. Next, dip into the egg wash allowing excess to drip off, then coat thoroughly in the panko breadcrumbs, pressing gently to help the crumbs adhere evenly.
  3. Chill the boudin balls: Place the coated boudin balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help the coating set and prevent them from falling apart during frying.
  4. Heat the oil: Pour 2 inches of vegetable oil into a deep fryer or heavy deep pot and heat to 350°F (175°C). Prepare a baking sheet lined with a wire rack and paper towels for draining the fried balls.
  5. Fry the boudin balls: Working in batches to avoid overcrowding, carefully add the chilled boudin balls to the hot oil. Fry, turning frequently for even browning, for 3 to 4 minutes or until golden brown and crispy on the outside.
  6. Drain and serve: Remove the fried boudin balls with a slotted spoon and place them on the wire rack to drain excess oil. Let them cool slightly before serving. They can be enjoyed alone or paired with a spicy Remoulade sauce for dipping.
