Description

Crescent Cherry Cheesecake Cobbler is a delightful layered dessert featuring flaky crescent rolls, creamy sweetened cream cheese, and luscious cherry pie filling. This easy-to-make cobbler combines comforting textures and classic flavors, perfect for any occasion. You can swap the cherry filling for any pie flavor you prefer.

Ingredients

Dough

  • 8 ounce tube crescent rolls (or crescent roll dough sheet)

Cheesecake Layer

  • 12 ounces cream cheese, softened (1 1/2 blocks)
  • 3/4 cup granulated sugar, divided use
  • 1 teaspoon vanilla extract

Filling and Topping

  • 21 ounce can cherry pie filling
  • 1/4 cup unsalted butter (1/2 stick), melted

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Spray a 2-quart (8x8x3-inch) baking dish with nonstick cooking spray to prevent sticking.
  2. Make Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese with 1/2 cup of the granulated sugar. Beat with an electric mixer until smooth and creamy. Add the vanilla extract and mix again until fully incorporated. Set this mixture aside.
  3. Prepare Crescent Roll Base: Unroll the crescent rolls and place four of them into the bottom of the prepared baking dish. Spread them out to cover the bottom evenly, pressing and sealing the seams as best as possible to create a solid base.
  4. Add Cheesecake Layer: Spread the cream cheese mixture evenly over the crescent roll base layer in the baking dish.
  5. Top with Cherry Pie Filling: Pour the cherry pie filling over the cream cheese layer. Spread it around gently and evenly to cover the entire layer.
  6. Cover with Remaining Crescent Rolls: Stretch out the remaining crescent roll dough on top of the cherry filling to cover it. Seal the seams carefully as best as possible to enclose the filling.
  7. Add Butter and Sugar Topping: Pour the melted butter evenly over the top crescent roll dough, making sure to cover all the dough. Then sprinkle the remaining 1/4 cup of granulated sugar evenly on top of the butter-coated dough.
  8. Bake: Place the cobbler in the preheated oven and bake for about 35-45 minutes, until the top crust is golden brown and crusty.
  9. Serve: Remove from the oven, allow to cool slightly, slice into servings, and enjoy this comforting cobbler warm or at room temperature.

Notes

  • This dessert must be refrigerated if not eaten the same day to maintain freshness and safety.
  • Use a baking dish with sides at least 3 inches high if using an 8×8-inch pan to prevent overflow, or opt for a 9×9-inch baking dish.
  • You can substitute the cherry pie filling with other pie flavors of your choice for variety.
  • Best served warm but delicious when cooled as well.
