Ingredients
Whole Oat Porridge Base
- 1 cup whole oat groats, soaked overnight*
- 4 cups filtered water
- Pinch of sea salt
Variation 1: Butternut Squash & Ginger
- 1 recipe Whole Oat Porridge base ingredients
- 3 ½ cups cubed butternut squash
- 1 tablespoon tamari, plus more for serving
- 4 teaspoons grated fresh ginger
- ½ garlic clove, grated
- For serving: scallions, toasted pepitas, parsley, toasted sesame oil
Variation 2: Miso & Avocado
- 1 recipe Whole Oat Porridge base ingredients
- 1 tablespoon white miso paste
- For serving: avocado, tamari, scallions, sesame seeds, microgreens
Instructions
- Prepare the Oat Groats: Drain and rinse the soaked oat groats thoroughly. Transfer them to a blender, add 4 cups of filtered water and a pinch of sea salt, then pulse until the grains are coarsely ground to achieve a porridge-ready consistency.
- Cook the Porridge Base: Pour the blended oat mixture into a medium pot and bring it to a boil over high heat, whisking frequently to prevent clumps. Once boiling, cover the pot, reduce the heat to low, and let it simmer gently for 30 minutes. Stir occasionally to avoid sticking. The grains should become soft and the porridge creamy by the end of cooking.
- Butternut Squash & Ginger Variation: When preparing the oat porridge base, add the cubed butternut squash, grated ginger, and grated garlic to the pot along with the oat mixture. Cook as directed until the porridge is creamy and squash is tender. Stir in 1 tablespoon tamari and adjust salt or seasoning to taste. Serve garnished with scallions, toasted pepitas, parsley, and a drizzle of toasted sesame oil and tamari.
- Miso & Avocado Variation: After cooking the basic oat porridge, turn off the heat and stir in the white miso paste until fully dissolved. If the porridge thins out, keep stirring over low heat for 15 to 20 minutes until it thickens again. Serve topped with sliced avocado, tamari, scallions, sesame seeds, and fresh microgreens for a flavorful twist.
- Serve Hot: Regardless of variation, serve the porridge hot as a nourishing, satisfying breakfast or snack, customizing toppings as desired.
Notes
- Soaking the whole oat groats overnight is essential for quicker cooking and creamier texture.
- Do not substitute rolled oats or steel cut oats for whole oat groats as the water ratio and cooking time vary significantly, resulting in a different texture.
- If using other types of oats, follow their specific package instructions for cooking.
