Ingredients

Soup Base

  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1 yellow onion, chopped
  • 2 cups mushrooms, sliced
  • 2-4 cloves garlic, minced or grated
  • 2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
  • 1 tablespoon fresh basil (or 1 teaspoon dried)
  • 2 teaspoons dried oregano
  • Red pepper flakes, to taste
  • Kosher salt and black pepper, to taste
  • 6 cups low sodium chicken broth
  • 3/4 pound boneless, skinless chicken breasts
  • 8 lasagna noodles, broken into pieces
  • 4-6 cups baby spinach, roughly chopped
  • 1 cup canned coconut milk, heavy cream, or whole milk

Cheese and Garnish

  • 1 cup shredded provolone cheese
  • 1/2 cup grated parmesan cheese
  • 2 ounces crispy pancetta or bacon, torn (for topping)


Instructions

  1. Prepare the base and sauté aromatics: Melt the butter and whisk in the flour in a large pot or using your preferred cooking appliance. Cook the roux until it’s lightly golden, about 1-5 minutes depending on method. Add chopped onion, sliced mushrooms, garlic, thyme, basil, and oregano. Stir to combine and cook until vegetables soften and become fragrant.
  2. Add broth and chicken: Pour in the low sodium chicken broth and submerge the boneless, skinless chicken breasts. Season with red pepper flakes, kosher salt, and black pepper. Depending on your cooking method, simmer, pressure cook, or slow cook the soup until the chicken is fully cooked and tender.
  3. Shred chicken: Remove the chicken breasts from the pot and shred with two forks. Return shredded chicken to the soup.
  4. Cook noodles and spinach: Stir in broken lasagna noodles, roughly chopped spinach, and the coconut milk, cream, or whole milk.
