Ingredients
Caramelized Onions
- 2 large yellow onions, sliced into thin strips
- 1 tablespoon olive oil
- 1/4 teaspoon salt
Dip Base
- 7 ounces silken tofu (about 1/2 of a 14 ounce block, drained)
- 1/2 cup vegan mayonnaise
- 1 teaspoon dry parsley (or 1 tablespoon fresh parsley)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry oregano (or 1 teaspoon fresh oregano)
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
For Serving
- Fresh chopped parsley
- Fresh chopped chives
Instructions
- Caramelize the Onions: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté for 8-10 minutes until they become lightly golden. Reduce the heat to medium-low and sprinkle with 1/4 teaspoon salt. Allow the onions to cook slowly, stirring only once every 10 minutes, until they turn golden brown and tender, which should take about 40 minutes.
- Blend the Dip: Transfer the caramelized onions to a blender. Add 7 ounces of drained silken tofu, 1/2 cup vegan mayonnaise, 1 teaspoon dry parsley, 1/2 teaspoon garlic powder, 1/2 teaspoon dry oregano, 1 tablespoon soy sauce, and 1 tablespoon apple cider vinegar. Blend until smooth and creamy. Taste and adjust salt or seasonings as needed.
- Serve Chilled: Chill the dip in the refrigerator for at least 30 minutes, then serve topped with fresh chopped parsley and chives. Enjoy as a flavorful vegan dip with chips, crackers, or fresh vegetables.
Notes
- Caramelizing the onions slowly is key to developing a rich, sweet flavor; resist the urge to stir frequently.
- Silken tofu must be well drained to avoid a watery dip.
- You can substitute fresh herbs for dried in the same approximate ratio for a fresher taste.
- Adjust the amount of soy sauce and vinegar to taste depending on your preference for tanginess and saltiness.
- Keep the dip refrigerated and consume within 3-4 days for best freshness.
