Ingredients

Soup Base

  • 1 cup heavy/whipping cream

  • Salt & pepper, to taste

  • 1 pound uncooked potato gnocchi

Garnish

  • 1 generous handful fresh basil, torn


Instructions

  1. Sauté Aromatics: Melt the olive oil and butter in a large pot over medium-high heat. Add the finely chopped onion and sauté for 5-7 minutes, until the onion turns lightly browned and translucent, developing the flavor base for the soup.
  2. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn the garlic.
  3. Combine Liquids and Seasonings: Pour in the crushed tomatoes, chicken or vegetable broth, and heavy cream. Add the white sugar and Italian seasoning, stirring to combine all ingredients evenly.
  4. Add Gnocchi and Simmer: Add the uncooked potato gnocchi to the pot. Increase the heat to high to bring the soup to a gentle boil, then reduce the heat to a simmer. Let it simmer uncovered for 15-20 minutes, stirring occasionally. This allows the gnocchi to cook through and release starches that will thicken the broth naturally.
  5. Season and Garnish: Taste and season with salt and pepper according to preference. Just before serving, stir in the torn fresh basil for a fresh herbaceous note. Serve hot and enjoy your creamy tomato gnocchi soup!
