- Cool and prepare eggplants: Remove the roasted eggplants from the oven and allow them to cool until they can be handled comfortably. Peel off the charred skin and discard any large clumps of seeds to avoid bitterness.
- Drain excess moisture: Scoop the eggplant flesh into a strainer set over a bowl. Use a spoon or ladle to press and extract excess water from the flesh, discarding the liquid to ensure a creamy texture.
- Blend the ingredients: In a food processor, combine the drained eggplant flesh, tahini, lemon juice, extra-virgin olive oil, garlic cloves, and salt. Pulse until the mixture becomes smooth and creamy, scraping down the sides as needed to blend evenly.
