- 8 ounces pasta (fettuccine, spaghetti, or linguini)
- 1/4 cup olive oil
- 3 teaspoons minced garlic
- 1 cup pumpkin purée
- 2 Tablespoons milk
- 1 Tablespoon white wine vinegar or apple cider vinegar
- 3/4 cup vegetable broth
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 3-4 fresh sage leaves or 1/2 teaspoon dried sage
- 1/2 cup grated parmesan cheese
- 2 cups spinach
Toppings
- 1/4 cup chopped walnuts
- 2 Tablespoons roasted pepitas
- Extra parmesan for garnish (optional)
- Sage leaves for garnish
Instructions
- Cook the pasta: Prepare pasta according to package directions until al dente. Drain and set aside.
- Sauté garlic: In a pan over medium-high heat, heat olive oil and sauté minced garlic for 2-3 minutes until fragrant but not browned.
- Make the sauce: Reduce heat to medium and add pumpkin purée, milk, vinegar, vegetable broth, salt, and pepper to the pan. Whisk the ingredients together and simmer gently for 4-5 minutes.
- Add herbs and cheese: Whisk in the sage leaves (whole or chopped) and grated parmesan. Turn off the heat and continue whisking for 2-3 minutes until the sauce thickens slightly.
- Combine with spinach and pasta: Stir in fresh spinach until wilted, then add the cooked pasta and toss well to coat everything evenly with the creamy pumpkin sauce.
- Garnish and serve: Top the pasta with chopped walnuts, roasted pepitas, extra parmesan (optional), and sage leaves for garnish. Serve warm and enjoy your cozy fall meal!
Notes
- To store, cool the pumpkin pasta completely before placing it in an airtight container. Refrigerate for 3-5 days or freeze for up to 3 months.
- Sage can be left whole and removed after cooking or finely chopped and left in the dish—adjust according to your taste preferences.
- Adding rotisserie chicken or other proteins is a great way to increase protein content.
