Ingredients
Pasta
- 4 servings pasta (of your choice, cooked al-dente)
Mushrooms and Aromatics
- 2 cups mushrooms (of your choice, sliced)
- 2 shallots (chopped)
- 3 tablespoons butter
Seasonings and Sauce
- 1.5 tablespoons soy sauce
- 1 teaspoon dashi powder
- 0.5 teaspoon black pepper
- 1 cup cream or milk
- Chives (for garnish)
- Parmesan cheese (for garnish)
Instructions
- Cook the pasta: Prepare the pasta according to the boxed instructions until it is al dente. Drain the pasta and set aside to be added later.
- Sauté mushrooms: Place the sliced mushrooms in a large frying pan and turn the heat to medium-high. Sauté the mushrooms for 2-3 minutes without any oil to release their fragrant aroma and slightly reduce moisture.
- Add butter, soy sauce, and shallots: Add two tablespoons of butter, the soy sauce, and the chopped shallots to the pan. Continue to sauté for another 2-3 minutes until the shallots become translucent and soft.
- Make the cream sauce: Pour in the cream or milk along with black pepper and dashi powder. Stir well and taste; add additional salt if needed, adjusting seasoning to your preference.
- Simmer sauce and combine with pasta: Bring the sauce to a gentle simmer and cook for 2 minutes to thicken slightly. Add the cooked pasta to the pan and mix thoroughly. Cook on high heat for 1-2 minutes, allowing the pasta to soak up the flavorful sauce.
- Finish and serve: Stir in the remaining one tablespoon of butter and fresh chopped chives. Plate the pasta and garnish with grated parmesan cheese to enhance creaminess and add a savory touch.
Notes
- Using medium-high heat to sauté the mushrooms without oil helps intensify their natural umami flavor.
- Dashi powder adds a subtle depth and umami to the sauce but can be omitted or substituted for a vegetarian-friendly broth powder if desired.
- Choose your favorite pasta shape; fettuccine, penne, or spaghetti work well with the creamy mushroom sauce.
- For a lighter version, substitute cream with whole milk or a plant-based milk alternative.
- Ensure to cook pasta just until al dente to prevent it from becoming mushy when combined with the sauce.
