Ingredients
Vegetables
- 1 kg (2 lb) cauliflower florets (cut into uniform-sized pieces)
- 2 garlic cloves, peeled and whole
Dairy and Fats
- 2 tbsp (30 g) unsalted butter
- 1/4 cup (25 g) parmesan cheese, shredded
- 1/4 cup (55 g) sour cream (optional)
Other
- 1–3 tbsp cooking water (reserved from boiling cauliflower)
- Salt and pepper, to taste
- Melted butter, for drizzling (optional)
- Chopped parsley, for garnish (optional)
Instructions
- Prepare Cauliflower: Cut larger cauliflower florets in half or quarters to ensure all pieces are about the same size for even cooking.
- Boil Cauliflower and Garlic: Place cauliflower and whole garlic cloves into a large pot of boiling water. Cook for 10 minutes until the cauliflower is very soft.
- Reserve Cooking Water: Scoop out about a mug of the cooking water before draining; this will be used later to adjust the mash consistency.
- Drain and Transfer: Drain the cauliflower and garlic well, then transfer them to a food processor for blending.
- Add Ingredients and Blend: Add unsalted butter, shredded parmesan cheese, and optionally sour cream to the food processor. Begin blending without adding any water to achieve smooth consistency. If a food processor is unavailable, use a handheld immersion blender.
- Adjust Consistency: Slowly add the reserved cooking water (1 to 3 tablespoons) as needed to make the mash creamier and smoother to your liking.
- Season: Taste and season the mashed cauliflower with salt and pepper accordingly.
- Serve: Transfer the mash to a serving bowl, drizzle with melted butter, and garnish with chopped parsley if desired.
- Enjoy: Serve as a side dish alongside your favorite meals, just as you would with traditional mashed potatoes.
Notes
- To keep the mash dairy-free, omit butter, parmesan, and sour cream or substitute with plant-based alternatives.
- Use fresh garlic cloves to add mild garlic flavor that mellows during boiling.
- Adjust cooking time if you prefer firmer or softer texture; ensure cauliflower is very soft for a creamy mash.
- The reserved cooking water helps achieve the perfect creamy consistency without thinning out the flavor.
- Garnishing with parsley adds freshness and a pop of color.
- This recipe can be made ahead and gently reheated with a splash of cooking water or milk to restore creaminess.
