  • ¼ tsp vanilla extract
  • ¼ tsp salt


Instructions

  1. Cook the rice and almonds: Add the butter, almonds, and jasmine rice to a medium saucepot and heat over medium heat. Cook and stir continuously for 1-2 minutes, until the butter melts and the rice and almonds start to smell toasted and fragrant.
  2. Add spices: Stir in the ground cinnamon and nutmeg, continuing to cook and stir for another 30-60 seconds to release the spices’ aromas.
  3. Combine liquids and sugar: Pour in the whole milk, then add the granulated sugar, vanilla extract, and salt. Stir everything together well.
  4. Simmer the mixture: Bring the mixture to a gentle simmer over medium heat, stirring occasionally to prevent sticking or scorching.
  5. Thicken the pudding: Reduce the heat to medium-low and let the rice simmer uncovered for about 40 minutes. Stir occasionally as the rice softens and the mixture thickens substantially. The pudding will continue to thicken as it cools.
  6. Serve: Once thick and creamy, serve the rice pudding warm or chill in the refrigerator to enjoy cold the next day.

Notes

  • For a nuttier flavor and crunch, toast the almonds separately before adding them in.
  • Stir frequently during simmering to avoid the rice pudding sticking to the pot and burning at the bottom.
