For the Crispy Onions
- 1 medium onion
- 1/2 cup (62g) all-purpose flour (spooned & leveled)
- 3/4 cup (45g) panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 large egg
- 1 Tablespoon (15ml) milk
For the Green Beans
- 1 Tablespoon + 1 teaspoon salt, divided
- 1 pound fresh green beans, rinsed, ends trimmed, and halved
For the Mushroom Sauce and Casserole
- 2 Tablespoons (28g) unsalted butter
- 8 ounces sliced mushrooms
- 1 teaspoon salt (divided: 1/2 teaspoon for onions and 1 teaspoon for mushrooms)
- 1/2 teaspoon ground black pepper
- 2 cloves garlic, minced
- 2 Tablespoons (15g) all-purpose flour
- 3/4 cup (180ml) chicken or vegetable broth
- 1 and 1/4 cups (300ml) half-and-half
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 450°F (232°C). Line a large baking sheet with parchment paper or a silicone baking mat to prepare for baking the crispy onions.
- Prepare and Bread Onions: Thinly slice the medium onion and separate slices. Place flour in one bowl, panko breadcrumbs mixed with 1/2 teaspoon salt and 1/4 teaspoon pepper in another, and whisk together the egg and milk in a third bowl. Using one hand for dry ingredients and one for wet, dip the onion slices first into flour, then into the egg mixture, and finally coat well in the panko mixture. Arrange coated onion slices on the prepared baking sheet.
- Bake Onions: Bake the breaded onions at 450°F for about 20 minutes until golden brown, flipping twice during baking to ensure even crisping. Once done, set aside to cool.
- Reduce Oven Temperature: Lower the oven temperature to 400°F (204°C) for casserole baking.
- Blanch Green Beans: Bring a gallon of water with 1 Tablespoon of salt to a rolling boil in a large saucepan. Add green beans and boil for 5 minutes. Immediately transfer green beans to a bowl of ice water to stop cooking, then drain and set aside.
- Make Mushroom Sauce: In a large (10- to 12-inch) ovenproof skillet, melt unsalted butter over medium-high heat. Add sliced mushrooms, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, stirring occasionally, until mushrooms release moisture, about 5 minutes. Stir in minced garlic and cook for 2 more minutes. Sprinkle flour over the mixture and stir until well combined and moisture is absorbed.
- Add Liquids and Thicken Sauce: Slowly pour in chicken or vegetable broth and let it simmer for 3 minutes. Reduce heat to medium-low and add half-and-half, stirring occasionally. Cook until sauce thickens, approximately 10 minutes or more, depending on preferred thickness.
- Assemble Casserole: Remove skillet from heat. Stir a quarter of the crispy onions and all of the blanched green beans into the mushroom sauce, mixing well. If your skillet is not oven-safe or you prefer, transfer this mixture into a greased 2–3-quart casserole dish.
- Top and Bake Casserole: Sprinkle the remaining crispy onions evenly on top. Bake in the preheated 400°F oven until casserole is bubbling at the edges, about 15 minutes. Remove from oven and serve warm.
- Storage and Reheating: Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently to maintain creaminess and crisp texture.
