Ingredients
Chicken
- 4 (6 oz) boneless skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 2 Tbsp olive oil, divided
Sauce
- 2 tsp minced garlic (about 2 cloves)
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 2 Tbsp Dijon mustard (such as Grey Poupon, can add more to taste)
- 1 1/2 tsp chopped fresh thyme
- 1/2 tsp dried sage
- 1 tsp honey
- Fresh parsley, minced, for garnish (optional)
Instructions
- Prepare the chicken: Using a meat mallet, flatten each chicken breast to an even thickness of about 1/2 inch to ensure quick, uniform cooking.
- Season and heat skillet: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Pat the chicken dry with paper towels and season both sides with salt and freshly ground black pepper.
- Cook chicken: Place the chicken breasts in the hot skillet and cook for 5 to 6 minutes on each side until cooked through. The internal temperature should reach 165°F (74°C) when checked with an instant-read thermometer. Once done, transfer the chicken to a plate and cover with foil to keep warm.
- Sauté garlic and reduce broth: Lower the skillet heat to medium-low. Add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté just until the garlic is fragrant and starts to deepen in color, about 10 seconds. Pour in the chicken broth along with the fresh thyme and dried sage. Allow the liquid to reduce by half, which should take about 1 minute.
- Make the creamy mustard sauce: Stir in the heavy cream and Dijon mustard. Let the sauce simmer, stirring frequently, until it thickens slightly, roughly 1 more minute. Add the honey and adjust seasoning with salt and pepper to taste.
- Serve: Place the cooked chicken on plates and spoon the creamy Dijon mustard sauce over the top. Garnish with minced fresh parsley if desired and serve immediately.
Notes
- Flattening the chicken breasts ensures even cooking and a tender texture.
- Use low-sodium chicken broth to control salt levels, especially if the mustard is salty.
- If you prefer a stronger mustard flavor, feel free to add more Dijon mustard to the sauce.
- Check the internal temperature to avoid overcooking and drying out the chicken.
- This dish pairs well with steamed vegetables, rice, or mashed potatoes for a complete meal.
