Ingredients
Chicken
- 2 chicken breasts, cut into 1-inch pieces

- Salt & pepper, to taste
- Flour, for dredging
Cooking Fats
- 3 tablespoons olive oil, divided
- 1 tablespoon butter
Vegetables & Aromatics
- 8 ounces cremini mushrooms, sliced
- 1/2 medium onion, chopped
- 3 cloves garlic, minced
Sauce
- 1 tablespoon Dijon mustard (or more, to taste)
- 1 tablespoon Worcestershire sauce (or more, to taste)
- 2/3 cup chicken broth
- 1/2 cup full fat sour cream
Instructions
- Prepare the Chicken: Cut the chicken breasts into 1-inch pieces. Season them with garlic powder, salt, and pepper. Coat each piece evenly in flour to create a light dredge which will help with browning.
- Brown the Chicken: Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat. Cook the chicken pieces in two batches to prevent crowding, allowing them to brown and cook through (about 3 minutes per side). Use tongs to flip the chicken carefully. For the second batch, add an additional tablespoon of olive oil if needed. Transfer cooked chicken to a plate once done.
- Sauté Mushrooms and Onions: In the same skillet, add butter and let it melt. Add sliced mushrooms and chopped onion and sauté for 6-8 minutes until their moisture releases, cooks off, and mushrooms develop a good sear.
- Add Flavorings: Stir in Dijon mustard, Worcestershire sauce, and minced garlic. Cook the mixture for about one minute until fragrant.
- Deglaze and Combine: Pour in chicken broth and scrape the bottom of the pan to loosen browned bits. Return the cooked chicken to the pan and cook for an additional 2 minutes, stirring occasionally to coat the chicken well.
- Finish with Sour Cream: Stir in the full-fat sour cream and heat through for about a minute. Avoid boiling to prevent curdling. Adjust seasoning with salt and pepper as needed. Serve immediately.
