Description

This Chicken Cheesesteak recipe offers a delicious and easy twist on the classic Philly cheesesteak by using tender sliced chicken breast cooked with sautéed onions and colorful bell peppers, seasoned with Italian herbs, and topped with melted provolone cheese. Served warm on hoagie rolls, it’s a perfect flavorful meal ready in just 25 minutes.

Ingredients

For the Chicken Cheesesteak

  • 1 tbsp. extra-virgin olive oil
  • 1 large onion, chopped
  • 3 bell peppers (red and green), chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 lb. boneless skinless chicken breasts, thinly sliced
  • 1 tbsp. Italian seasoning
  • 6 slices provolone cheese
  • 4 hoagie rolls

Instructions

  1. Heat the vegetables: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and bell peppers, then season with kosher salt and freshly ground black pepper. Cook, stirring occasionally, until the vegetables are very soft and tender, about 8 to 10 minutes.
  2. Cook the chicken: Add the thinly sliced chicken breasts to the skillet along with the Italian seasoning. Stir well to combine all ingredients. Continue cooking, stirring occasionally, until the chicken is golden brown and cooked through with no pink remaining inside, approximately 10 minutes.
  3. Melt the cheese: Cover the chicken and peppers with the slices of provolone cheese, then cover the skillet to allow the cheese to melt thoroughly. Leave covered for about 1 minute or until cheese has melted.
  4. Assemble the sandwiches: Remove the chicken cheesesteak mixture from heat. Serve hot by spooning the cheesy chicken and pepper mixture into the hoagie rolls, then enjoy immediately.

Notes

  • Thinly slicing the chicken breasts allows for quicker cooking and better texture similar to traditional cheesesteaks.
  • You can use any combination of bell peppers – red, green, yellow, or orange – for a colorful and sweet flavor profile.
  • For extra flavor, consider adding sautéed mushrooms or hot cherry peppers.
  • Use freshly grated provolone if available for better melting and flavor.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in a skillet or microwave.
